soft crushing and pressing of the grapes, spontaneous fermentation and malolactic fermentation in stainless steel tanks, maturation during twelve months in small oak barrels of 225, 300 and 500 litres (French oak - Allier, Nevers, Vosges - depending on the vintage up to 1/3 in new wood)
