Vinification
This wine goes through an extensive cold maceration at less than 50oF (10oC) to extract aromas. The juice is then fermented for around 14-20 days with a post-fermentation maceration of approximately 3-10 days. Elevage: 6-8 months in 100% French Oak barrel. 30 – 40% new, second and third use barrels.
